Glossary

Tortillas - Thin corn of flour bread used as a base for many dishes.

Burrito - Large flour tortilla, folded with choice of fillings inside.

Enchiladas - Corn tortilla rolled up with choice of filling, topped with cheeses and enchilada sauce.

Taquitos - Corn tortillas wrapped around shredded chicken or beef and fried crispy.

Carne Asada - Thinly sliced steak, marinated in fresh lime juice and grilled.

Carnitas - Tender pork, cooked slowly--the traditional Mexican way.

Pico de Gallo - Salsa fresca of diced tomato, onion, cilantro, and fresh jalapeños with lime juice.

Salsa Enchilada - Red chile based sauce.

Salsa Ranchera - Plum tomato, sweet bell peppers, and white onion sauce.

Salsa Tomatillo - Green tomatillos and onions sauce. Tomatillos have a lemony tomato flavor.

Tamales - Savory meat filings encased in corn meal and steamed in corn husks.

Torta - Sandwich on a crusty Mexican roll.
